PBS is a great source of entertainment, and documentaries in particular. Nova, Nature, American Experience, and Frontline all offer full episodes online. They may vary given PBS's schedule, but that means that they are also changing often and updating. It's certainly worth checking out.

If you'd like a little bigger scope, these sites provide a giant catalog to the various documentaries available online. These only point you to the films, which are often on Youtube (and may be of lower video quality), but they do a great job of showing you what's out there.
